Happy Father’s Day to all the lovely dads out there!
I am busy making Father’s Day dinner here on this Sunday afternoon. It can be slow going with two babies but while Crunchy Daddy keeps Crunchy Toddler occupied, I can do some work in the kitchen thanks to babywearing.
Crunchy Daddy will be grilling a couple of nice NY strips from Whole Foods later tonight but I am making some lovely accompaniments that work with many different main dishes. I’m going to share a very simple Paleo Roasted Carrots recipe that is delicious and easy to prepare with a very small list of ingredients.
One of these is coconut oil. Now I’ve been buying these giant tubs of coconut oil from Costco and they have been working really well but I recently got a jar of Tropical Traditions Virgin Coconut Oil from Amazon and love it. It tastes a little bit more like coconut than the Costco brand but if you like the taste of coconut, it’s not a bad thing at all.
Find yourself some nice organic carrots, peel them and set them in a baking dish. Preheat your oven to 350.
Toss in coconut oil, then coat in honey and sprinkle on some salt and pepper.
Roast in the oven for 45 minutes to an hour and your carrots are ready to serve!
Paleo Roasted Carrots – Recipe
You’ll Need:
- 6-8 organic carrots, peeled
- 1/4 cup raw honey
- 3 TBSP coconut oil (I am loving Tropical Traditions Virgin Coconut Oil)
- Salt and Pepper to taste
- Preheat oven to 350
- Toss carrots in oil
- Add honey to dish and turn carrots until they are coated in honey
- Sprinkle salt and pepper
- Roast in oven for 45 minute – 1 hour until carrots are done
