Just Two Vanilla Cupcakes (Paleo, Gluten-Free)

That’s right, this recipe makes exactly two Vanilla cupcakes that are gluten-free and processed-sugar-free. I did use dairy in this one and will start working on a dairy-free version but I am really excited that this worked for me the first time.

I have baked with many different kinds of Paleo sweeteners. My favorite so far is Raw Coconut nectar. It doesn’t color frosting and doesn’t have any taste other than sweet. I found this at Whole Foods.

Prepare your cupcake tin and line with two cupcake liners.

In a medium bowl, whisk all your wet ingredients except for coconut milk until it is nice and combined.

In a small bowl, combined your dry ingredients well. It doesn’t look like much but coconut flour is really dense so you only need a very little bit for two cupcakes.

Add your dry ingredients to the wet ingredients, whisk well and then stir in the coconut milk to form your final cupcake batter.

Divide batter evenly among the two cupcake liners and bake for 18-20 minutes in a 350 oven.

going in

Test with a toothpick in the center of a cupcake. It should come out clean and the top should be nice and brown. Take them out of the oven and cool completely before frosting.

While your cupcakes are cooling, you can work on your favorite frosting. I just made a simple white frosting using organic whipping cream, coconut nectar and vanilla.

You can use a piping bag and decorating tip to decorate your cupcake. I chose the trusty Wilton 1M.

Two Vanilla Cupcakes

You’ll need:

  • 2 TBSP melted butter
  • 1 tsp Vanilla extract
  • 1 Egg
  • 2 TBSP coconut nectar
  • 1 TBSP coconut flour
  • 1/4 heaped tsp baking powder
  • small pinch of salt
  • 3 TBSP whole coconut milk

 

  1. Preheat oven to 350 and line a cupcake tin with two cupcake liners
  2. In a medium bowl, whisk together egg and coconut nectar
  3. Add butter and vanilla and whisk to combine
  4. In a small bowl, combine coconut flour, baking powder and salt
  5. Add dry ingredients to wet and whisk to combine
  6. Stir in coconut milk
  7. Evenly distribute batter between two cupcake liners and bake for 18-20 minutes. Test with a toothpick in center. It should come out clean
  8. Cool completely before frosting

Simple White Frosting


You’ll need:

  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 2 TBSP coconut nectar

 

  1. In a stand mixer or using a hand mixer, whip cream, vanilla and nectar on high until frosting is stiff.
