Here is another easy accompaniment dish to serve with your main dish – Garlic and Rosemary Roasted Sweet Potato. It goes well with any kind of meat dish. The savory properties of the garlic and salt compliment the sweetness of the potato really well.
You need only a handful of fresh ingredients.
Dice your sweet potatoes into 1-inch cubes and mix with the herbs and olive oil. Then lay them flat on a baking sheet.
About 40 minutes in a 375 oven with a bit of a turn in halfway through and you are done!
You’ll need:
- 2 large sweet potatoes, peeled and diced into 1-inch cubes
- 2 TBSP olive oil
- Salt and pepper to taste
- Bunch of fresh rosemary
- 5 garlic cloves, coarsely diced
- Preheat oven to 375 and prepare a baking sheet lined with foil
- Put sweet potatoes, olive oil, salt and pepper, rosemary and garlic in a large mixing bowl and stir well until all the potato cubes are evenly coated
- Lay potatoes on the bakin sheet and evenly spread on a single layer
- Roast in oven for 20 minutes. Turn potatoes and roast for an additional 20 minutes until done
