I mentioned in my last post that I took my husband to see Willie Nelson on his birthday. It was pretty darn cool and Willie is still rocking it at almost 80 years old.

I had a great time even though I was massively pregnant and sitting in the front row directly in front of the speakers. The crowd was older and well behaved (only a bit of reefer smoke at the back bar :-)).

A dish like this would have been a nice way to end the night if it wasn’t 11pm by the time we got home (2am bedtimes don’t cut it anymore when you have little toddlers).

This is very simple and easy to make but super yummy as a snack or main meal.

Marinate your wings in some salt, coconut aminos, dry sherry, star anise and ginger for at least an hour.

Finger Lickin' Good Twice-Cooked Wings (Paleo, Gluten Free)Reserve 3-4 TBSP of the sauce still in your steamer and now deep fry the wings for about 3-4 minutes in hot oil (You may use olive oil, avocado oil or coconut oil)

Finger Lickin' Good Twice-Cooked Wings (Paleo, Gluten Free)Your wings have now been twice-cooked! Lay them on a serving plate.

Finger Lickin' Good Twice-Cooked Wings (Paleo, Gluten Free)Sprinkle green onion on top and some extra peppers if you like it spicy. Drizzle the reserved sauce and pour 2 TBSP of hot sesame oil over the top.

Finger Lickin' Good Twice-Cooked Wings (Paleo, Gluten Free)

You’ll need:

  • 2-3 lb chicken wings
  • 1/4 tsp Sea salt
  • 5 TBSP coconut aminos
  • 1 TBSP dry sherry
  • 1 star anise
  • 4 slices of fresh ginger
  • 1-2 green onions, sliced
  • 1 TBSP hot pepper flakes (optional)
  • 2 TBSP sesame oil
  • Fat Of Your Choice for Deep Frying (Olive oil, avocado oil or coconut oil)
  1. Marinate wings in salt, coconut aminos, sherry, star anise and ginger for at least an hour
  2. Steam wings with marinade on high for 20 minutes
  3. Remove chicken from steamer and reserve 3-4 TBSP of sauce
  4. Heat up fat of your choice to high and deep fry wings for 3-4 minutes
  5. Set wings on a serving plate, sprinkle with pepper if using and green onion. Drizzle steamer sauce over wings.
  6. Heat up sesame oil in a small pan and drizzle over top of wings
