Braised Slow Cooker Beef Short Ribs (Paleo, Gluten Free)

Rainy winter days always mean curling up on the couch or bed with a few essentials (A busy mom can still dream, can’t she?) –

I need my favorite movie or book. Currently, I’m reading this delightful book by Karen Le Billon. Emma is a toddler but I’m hoping some insights from the book can help establish some healthy eating habits early on (I’ll get back to you about how successful this is).

I need some warm bodies to keep me company. Before you suggest my cat, you have not met Chairman Meow. He is a shelter animal with a few screws loose in his little noggin. I much prefer to curl up next to my handsome husband when I can tear him away from football or the laptop.

And of course, I would want a bowl of warm comfort food.

This hearty, delicious dish fills my house with savory aroma as it cooks all day in the slow cooker and is really satisfying.

Find yourself about 3 lb of chuck short ribs.

Short Ribs

Season with salt and pepper and brown over high heat on the stovetop.

Put the browned ribs in your slow cooker.

In the pan, saute onions and garlic until the onions are translucent.

Add all the sauce ingredients and stir over high heat until it is boiling. If you are hungry, the aroma will drive you mad!

Pour the hot sauce over the ribs in the slow cooker and cook on low for about 8 hours until meat is fork-tender and pulls off the bone easily.

Braised Beef Short Ribs

Here it is after 8 hours of slow-cooking… nom nom.

You’ll need:

  • 3 lb of chuck short ribs
  • 1 onion sliced
  • 4 cloves of garlic minced
  • 2 TBSP of olive oil or bacon grease for the pan
  • Salt and pepper to season ribs
  • 3/4 cup red wine
  • 3/4 cup red wine vinegar
  • 1/3 cup honey
  • 1 7oz jar of tomato paste
  • 3/4 cup beef broth
  • 1/4 cup worcester sauce
  • 1/4 cup coconut aminos

 

  1. Season ribs with salt and pepper and brown in a large saucepan on all sides over high heat
  2. Place browned ribs in a slow cooker and set aside
  3. In the same saucepan, saute onions and garlic until onions are translucent
  4. Add the rest of the ingredients and stir until sauce is boiling
  5. Pour sauce over ribs in slow cooker and cook for 8-10 hours until meat is fork-tender
  6. Serve whole pieces or pull meat apart and dress up with parsley or green onions

This is great paired with some simple steamed or roasted vegetables. I served this for dinner tonight with my garlic and rosemary roasted sweet potato. A perfect dish for this winter!
