Today, we did a late term ultrasound to check the position of my placenta as it was creeping a bit close to my cervix some months ago. Everything is great except this baby has a gigantic head and belly (measuring two weeks bigger than everything else). I suppose with genes like ours, he didn’t really stand a chance. I have to check the mens section to find hats that will fit me.

We also took some lovely family and maternity portraits this week. But it wouldn’t really be us without a few interesting outtakes. Photos like this will not make the family wall but it will be fun to pull out for the laugh years down the line.

My husband says he only does these portrait sitting “things” for me… and the food I make. His payment for doing this was my hot and sour soup which I will share with you today. It’s really simple with an ingredient list free of nasty stuff and yes, very tasty.

Start off by marinating some pork in coconut aminos, dry sherry and tapioca flour.

Usually, my local store has fresh shitake mushrooms but today, they didn’t so we had to get some dried organic ones that can be soaked in hot water to prepare for cooking.

Chop up some ginger, bamboo shoots and green onion as well.

Prepare the soup base made with three types of vinegar (white vinegar, red wine vinegar and balsamic vinegar), coconut aminos, raw honey, salt, white pepper and sesame oil)

Yum Yum Hot and Sour Soup (Paleo, Gluten Free)In a large pot, heat up your fat of choice (olive oil, coconut oil or bacon grease) and fry the ginger and pork until it is just cooked.

Add chicken stock and bring to a boil

Add the soup base to the pot. Give the tapioca flour paste a stir and then add that to the pot too. Your soup should be quite thick now. You can correct the seasoning if you wish with extra salt or vinegar.

Serve with a sprinkling of green onion on top.

You’ll need:

  • 1/2 lb of pork, cut into thin strips
  • 10 oz shitake mushrooms, thinly sliced
  • 8 oz bamboo shoots
  • 3 slices of fresh ginger root, minced
  • 2 eggs, beaten
  • 6 cups of homemade or organic chicken stock
  • 4 TBSP tapioca flour + 4 TBSP cold water, mixed into a paste
  • Pork Marinade:
  • green onion, diced for garnishing
  • 2 TBSP fat of your choice (olive oil, coconut oil, bacon grease)
  • Soup Base:
    • 3 TBSP coconut aminos
    • 2 TBSP white vinegar
    • 4 TBSP red wine vinegar
    • 3 TBSP balsamic vinegar
    • 2 tsp sea salt
    • 1 TBSP raw honey
    • 1 tsp white pepper, ground
    • 1 TBSP sesame oil 
  1. Combine pork with marinade and set aside for at least 10 minutes
  2. Combine soup base ingredients and set aside
  3. If you are using dried shitake mushrooms, you can rehydrate them by soaking in hot water for 20 minutes or until soft.
  4. In a large pot, heat up your fat of choice
  5. Throw in ginger and pork and cook on high until meat is just cooked
  6. Add shitake mushrooms and bamboo shoots and cook for a minute
  7. Add chicken stock and bring to a boil
  8. Add soup base to the pot and bring to a boil, allow to simmer for a minute or two
  9. Stir tapioca flour paste and add to the pot, stirring until the soup is thick. Correct seasoning with extra vinegar or salt if required
  10. Turn off heat. While stirring the soup, add the egg to it through a slow stream.
  11. Top with green onion and serve

  2. Making this tonight for the second time! It was by far the best hot and sour soup I ever had. I made mine with chicken as it was what I had on hand. I just finished a batch of chicken/duck bone broth and knew this was how I should use it! I didn’t have balsamic vin last time and used coconut vinegar instead and it came out fine. I literally ate this for breakfast and lunch the next day till it was gone. YUM. Thanks!
