Wow, having an extra baby while you have a spirited toddler actually makes this exponentially harder instead of proportionally. Crunchy Baby No 2 has survived almost three weeks. We are not getting a lot of sleep here but we are otherwise very happy.

My kitchen adventures are now greatly limited so I have to wait for weekends to experiment with long recipes. Weekday meals are reduced to quick and easy dishes.

This one took all of 8 minutes to get in the crockpot and 6 hours and a side salad later, dinner was on the table. It was ridiculously easy.

Wash and pat dry some chicken pieces. I used thighs but this works just as well with drumsticks.

Mix together some salt, pepper, paprika, onion powder, garlic powder and thyme.

Coat the chicken pieces in your herb mixture.

You can place some onions or potatoes in the bottom of a crockpot. Or if you were in a hurry like me today, crumple up some foil. This prevents the chicken from getting soggy in the accumulating liquid.

Place chicken on top of you vegetables/foil and cook on LOW for 6 hours.

You’ll need:

  • 4 lb chicken thighs or drumsticks
  • 2 TBSP sea salt
  • 2 TBSP paprika
  • 2 TBSP onion powder
  • 2 TBSP garlic powder
  • 2TBSP dried thyme
  • 1 tsp black pepper
  • OPTIONAL -1 cut up onion
  1. Wash and dry chicken pieces thoroughly
  2. combine salt and spices and rub all over chicken pieces
  3. If you are using onions, lay it in the bottom of your crockpot. Otherwise crumple up a piece of foil and lay it in the bottom
  4. Put chicken pieces in and cook on low for about 6 hours until cooked

  1. Wow!! Simple recipe. On seeing the picture itself i could guess how tasty it might be. Cooking chicken alone takes few hours. Cooking chicken in low flame adds more taste. Definitely i would try this and come back again here to share my tasty experience. Thanks for the recipe.
