Garlic and Rosemary Roasted Sweet Potato (Paleo, Gluten Free)

Dice your sweet potatoes into 1-inch cubes and mix with the herbs and olive oil. Then lay them flat on a baking sheet.

You’ll need:

  • 2 large sweet potatoes, peeled and diced into 1-inch cubes
  • 2 TBSP olive oil
  • Salt and pepper to taste
  • Bunch of fresh rosemary
  • 5 garlic cloves, coarsely diced

 

  1. Preheat oven to 375 and prepare a baking sheet lined with foil
  2. Put sweet potatoes, olive oil, salt and pepper, rosemary and garlic in a large mixing bowl and stir well until all the potato cubes are evenly coated
  3. Lay potatoes on the bakin sheet and evenly spread on a single layer
  4. Roast in oven for 20 minutes. Turn potatoes and roast for an additional 20 minutes until done
