Easy Slow Cooker Pork Loin with Honey and Balsamic Glaze (Paleo, Gluten Free)

Walk into my house on any given day and you will witness exclamations of “Maaaaaaa!!!”, “Kiityyykittyyykittyyy!!!”, “Gogogogogogo!” and a number of baby sign language gestures like “food”, “more”. In all my life of working as an IT Consultant in high-pace, demanding environments, noone has had me running around as much as this one pint-sized tyrant.

I try and come up with activities around the house that will stimulate her little growing mind. So far, I’ve convinced her doing laundry is entertaining. I wonder if I can get her to do the dishes soon 😉

On most days, I won’t really have the ability to stand for uninterrupted hours in the kitchen working on my coq au vin or beef bourguignon. The kitchen and the food will always be there, my toddler’s little moments will not.

This slow cooker recipe is one of those I am grateful for on the busy days. It takes about 5 minutes up front and another 5-10 minutes at the end to put together this delicious and healthy dish.

This works very well with either a pork tenderloin or just pork loin pieces as I have used.

Pork

Combine the seasoning herbs and spices and mix together with pork. Then throw it all in the slow cooker. Cover the meat with some chicken or beef stock. This will stop your pork from getting dry.

Just before the meat is done, you can cook the honey and balsamic glaze in a small saucepan on the stove.

After 6-8 hours in the slow cooker, the pork is done.

Arrange pork on a plate and spoon the glaze on top and serve!

Pork Tenderloin with Honey Balsamic Glaze

You’ll need:

  • 2 lb pork loin or pork tenderloin
  • Salt and pepper to taste
  • 2 cloves of garlic, minced
  • 1 tsp dried sage
  • 1-2 cups of chicken or beef stock, enough to almost cover meat in the slow cooker

For the glaze:

  • 5 TBSP raw honey
  • 1/4 cup balsamic vinegar
  • 2 TBSP coconut aminos
  • 1/2 cup chicken or beef stock
  • 1 TBSP tapioca flour

 

  1. Combine garlic, sage and salt and pepper and mix pork in this
  2. Place pork in slow cooker and cover with stock
  3. Cook on LOW for 6-8 hours
  4. Just before pork is ready, prepare the glaze by combining ingredients in a small saucepan over the stove
  5. Arrange pork on plate and cut across the grain or shred. Spoon glaze over pork and serve

  3. Was hoping to make this for some friends this weekend but have a friend that is allergic to coconut. Do you know a good substitute for the coconut aminos or can I just leave them out for the glaze? Thanks! Can’t wait to try it!

    • If you are ok with soy, gluten free tamari is a good choice. Otherwise, just omit and increase the salt and balsamic vinegar amounts to taste 🙂

  4. Any chance I would leave out the tapioca flour in the glaze? Or maybe substitute something else for it?

    • The tapioca flour is only for thickening so you can leave it out altogether or use another thickening agent you are comfortable with e.g. arrowroot
