Happy National Hot Chocolate Day! I’m sitting here defending my mug of rich, creamy Paleo-friendly hot chocolate from my toddler, it’s a tough life. This tastes like liquid chocolate goodness. I think my version of heaven would have this stuff running in streams and fountains.
Start with some full cream coconut milk brought to rapid simmer on the stovetop.
Find yourself an ounce of your favorite unsweetened dark chocolate.
Whisk in the chocolate, drops of vanilla and sweetener of your choice (I used honey).
And in a few minutes, you can enjoy your own cup of hot chocolate goodness – guilt-free!
You’ll need:
- 1 can of coconut milk (full cream)
- 1 oz unsweetened chocolate, chopped
- 1 tsp vanilla essence
- Sweetener to taste – I used about a TBSP of raw honey
- Bring coconut milk to a rapid simmer on stovetop
- Lower heat and whisk in chocolate, vanilla essence and sweetener until it is well combined.
- If you don’t like your hot chocolate thick (I like it this way), you can add some almond milk to thin it out
This looks amazing. Maybe I can now convince my husband to quit making processed hot chocolate with the keurig machine!
It is so super creamy and delicious! If he likes hot chocolate, he will never go back to the keurig variety after trying this 🙂

I used the Native Forest organic canned coconut milk. Hope you give it a go!
