Crunchy Mama’s Coconut Flour Honey Biscuits (Paleo, Gluten Free)

I have been researching a lot of recipes for Paleo biscuits and didn’t really LOVE any of them – too much almond flour, too many egg whites or no butter. I feel like biscuits need to have butter. In saying that, if you’re dairy-free, this recipe will work just fine if you substitute coconut oil for butter – just add the melted coconut oil with the wet ingredients instead of cutting into the dry.

My toddler was particularly cooperative this morning so I had some time to give this a go and was very pleased with the warm, sweet, fluffy result.

These are quick to make and go very well with some butter or a berry compote!

In a small mixing bowl, sift your dry ingredients (coconut flour, baking powder and salt). If you are using butter, cut cold butter into this with your fingers till you get a coarse mixture.

Dry ingredients

In a separate bowl, whisk together your eggs, honey, maple syrup. If you are using coconut oil, you will also add that here.

Wet ingredients

Fold your wet ingredients into the dry. It will be a little lumpy because of the butter pieces but that is ok (if you used coconut oil, you shouldn’t have lumps).

Mixed together

I used some lined muffin tins and scooped spoonfuls into them and put them in the oven.

Ready to go in oven

In a 400 oven, they should be ready in about 12-14 minutes.

Out of the oven

You’ll need:

  • 1/3 cup sifted coconut flour
  • 1/4 tsp sea salt
  • 1/4 tsp baking powder
  • 1/4 cup very cold butter or melted coconut oil
  • 4 eggs
  • 1-2 TBSP honey (to taste. My husband likes it less sweet and I like it sweeeet)
  • 1-2 TBSP maple syrup(to taste. My husband likes it less sweet and I like it sweeeet)

 

  1. Preheat oven to 400
  2. In a medium bowl, sift coconut flout, salt and baking powder together.
  3. If using butter, cut cold butter pieces into the dry ingredients until you get a coarse mixture
  4. In a small bowl, whisk together eggs, honey, maple syrup (and coconut oil if you are using this instead of butter)
  5. Add wet ingredients to dry and gently fold. If you are using butter, you will have a lumpy mixture
  6. Spoon batter into some lined muffin tins and bake for 12-14 minutes until golden brown

    • That’s great Andrea! I’m glad the kids liked them. Another Paleo “bread” recipe I’ve had success with is this cornbread. It uses almond flour so has a different texture from the biscuit (makes it taste kinda like cornmeal). Have a look and see if it works for you.

  4. Will these work if I leave out the honey and maple syrup? I can’t have these things because of blood sugar issues. Maybe I can sub coconut nectar? What do you think?

    • Yes, 7 is how many I got (although it probably made 6 bigger ones, the last one was a tad smaller)

      • I need to make something for about 20 to 25 people. I and two others in the group are both gluten and lactose intolerant. Is there a way to increase the amount and still have it come out as good? Need to know right away.

My second batch I did for breakfast and added cinnamon, crushed walnuts, shredded coconut and cacao nibs…..they were to die for! I made the mistake of making them when my niece and nephew were over…so I had to share.

  8. Thanks for the recipe! Been looking for a paleo bread type recipe and this looks great. I was wondering, what brand of coconut flour did you use? I made paleo coconut loaf bread with raw coconut flour and it turned out awful. Maybe with small batches like this it will turn out well…

  10. These were REALLY good! Next time I’ll leave out the honey for biscuits. With the honey, I think they’d be awesome with either fresh chopped strawberries or blueberries! Not dense AT ALL! 1st Paleo bread I’ve made that wasn’t dry šŸ™‚

  11. Finally! A coconut flour recipe that actually turned out good. I left out the maple syrup and added a 1/4 tsp of baking soda (in addition to the baking powder) and a capful of apple cider vinegar. I read somewhere that the baking soda and apple cider vinegar helps when baking with coconut flour. I can see using this base recipe to make all kinds of muffins. The batter was REALLY wet, which I now know to look for when baking with coconut flour. Thanks!

  12. Hi, I made these but they flopped. I made my own coconut flour by blending desiccated coconut, do you think this is why they didnt work out?
    Perhaps I need to get the store bought type.

  14. I made these tonight and they turned out super yummy. I used coconut oil and 2 tbsp honey (they would have been too sweet if there were more honey then that) I didn’t find them taste too eggy but the texture was a bit on the eggy side. I find with coconut flour you have to watch them carefully as they like to over cook quickly. i had them in the oven just a tad too long as I was putting the kids to bed, lol. that being said they were yummy with jam and I will def make these again. it will be nice to have them around in the mornings for a change up on my usual meat and veggies paleo breakfast. thank you for a yummy recipe.

  17. Hi! Yummy, but mine were really eggy. I made a double batch and used 7 eggs. The batter was lumpy and really loose, which was fine, but they tasted a little on the eggy side. Maybe my eggs are unusually large? Anyway, I might cut down on the egg, and maybe add a tiny bit more baking powder next time.

  19. Yum! I just made these 3 different ways and thankfully they all turned out great! First batch I did normal then added 1/2 of a mashed banana, then added banana and cocao in the last batch and they were great. I will be using this as a base for everything!

  30. I found them rather eggy too. They were good, but Iā€™m looking for something I can use in place of rolls during the holidays.

  31. My 3 year old helped me make these and ate half of one (she’s picky, so that’s a good sign), my son didn’t really give it a chance, my husband loved them and said with jelly it tastes like cornbread! Followed exactly, used butter and got 8 nice size muffins. Thanks!!
